My brother Tommy and his wife hosted Thanksgiving on the weekend and as a 'thank you for coming' I got 50 lbs of potatoes! And not just any potatoes. These were farmer fresh (picked earlier that day) and grown by Tom himself. I am a lucky girl.
Now all I have to do is find a way to get through all 50 lbs!! We already used some for the turkey dinner I made on Monday night, and we are having home made french fries tonight. Good thing I like potatoes and there are so many ways to prepare them.

oooh... baked potato soup! It's like a big bowl of love :)
ReplyDeleteI know you haven't asked for it, but I'll give you my recipe anyway :)
(Serves 4)
2 med. baked potatoes, peeled &cubed
1 med. sweet onion, chopped
1-2 cloves garlic, minced
a little bit of olive oil
3-6 (I tend to use 6 :) strips of crispy bacon, crumbled
3 tbsp. flour
1 tsp. basil
1 tsp. (or less) salt
1 cup chicken stock/broth
1/2 tsp (or more) pepper
1/2 cup half and half cream
1/2 cup milk
sautee the onion and garlic in a bit of olive oil. When they're translucent, add the flour, salt, pepper and basil. Stir well. Gradually add the broth. Stir and bring to a boil. Take down to a simmer and add potatoes, cream and bacon. Heat through, but don't boil. I puree it with a hand blender at this point, but you don't really need to. Garnish with cheddar if you like. :)
The original recipe said to sautee in the bacon grease instead of olive oil and use a whole cup of half and half, but I found that really heavy - you could probably use all milk, but it won't be as thick.
